Word on the street is that breakfast is the most important meal of the day -- but for a lot of us, it’s unfortunately also the most rushed meal of the day.
After all, it’s easier said than done to whip up a quick, nutritious breakfast before running out the door!
But, thanks to chef Rocco DiSpirito -- and his new book "Rocco's Healthy + Delicious: More than 200 (Mostly) Plant-Based Recipes for Everyday Life" -- it may be more doable than you think!
"This is a lifestyle for me," Rocco says of eating healthily, yet deliciously. "I went through the transformation 10 years ago. It’s about common sense healthy."

Complete with homemade Thousand Island dressing (Rocco makes his with low-sugar ketchup, yogurt and unsweetened relish). Yum-o!

BACON, EGG AND CHEESE BREAKFAST SANDWICH

Believe it or not, Rocco doesn’t tweak the classic too much.
"Usually the only problem is the bread or the muffin or the biscuit," he explains.
Plus, he makes his with turkey bacon!
