If you’ve tried and failed to poach an egg in the past, don’t give up hope! Rachael and Bobby Flay are breaking it down for you, step-by-step, and taking all the mystery out of the process!

Step 1: Bring a pot of water to a simmer with a little vinegar added.

Step 2: Break your egg into a small bowl or ramekin, rather than cracking it directly into the pan of boiling water. This way, if you accidentally break the yolk, you can discard or use elsewhere, rather than having to fish it out of the water.

Step 3: Carefully drop your egg into the simmering water. The vinegar will help your egg white coagulate.

Step 4: If you want your egg to come out nice and round, use a spoon or spatula to create a little whirlpool around the egg while it’s cooking.

Step 5: Wait until the egg is cooked to your liking, then gently remove it with a slotted spoon or a small mesh strainer. That’s it!
