For the rolls
  • 2 cups pancake mix (one that requires oil, egg and milk. Extra credit for blueberry flavor)
  • 2/3 cup whole milk
  • 2 tablespoons salted butter, melted
For the filling
  • 2 teaspoons pumpkin pie spice
  • 2 tablespoons granulated sugar
  • 4 strips bacon, crisped
  • Zest of one orange
  • 1/2 cup chopped pecans
For the glaze
  • 1 cup powdered sugar
  • 2 tablespoons orange juice


Serves: 12 rolls


Make the dough. In a large bowl, add the pancake mix and slowly whisk in the milk until a dough forms. (You may not use all the milk, so add it slowly.) Pour dough onto a floured counter and roll into a rectangle about 1/8-inch thin. Brush the top with butter.

Fill, roll and cut
. In a food processor, pulse the pumpkin spice, sugar, bacon, and orange zest until combined. Spread mixture on the buttered dough then sprinkle the pecans evenly over the top. Roll the dough and cut 12 even pieces.

. Preheat oven to 350° F. Coat the bottom and sides of an 8x8 baking dish or a 9-inch pie pan with cooking spray. Nestle rolls cut-side up into dish and bake uncovered for 10-15 minutes.

Glaze and serve. In a small bowl, whisk the sugar and juice until a glaze is formed. Drizzle over the rolls and serve.
