Her delicious and quick recipes prove that healthy cooking doesn't have to be hard. This salad features crispy Brussels sprouts, juicy marinated chicken breast, creamy avocado, luscious dates and shaved Parmesan. The combination of flavors and textures is amazing, and the dish takes barely any time or effort to make. No wonder people can't get enough of them!
Pro Tip from Alexa: I like my Brussels sprouts extra crispy. If you do, too, leave them in the air fryer a little longer. Also, feel free to dress the salad however you like. It's great with pretty much most dressings, including Asian sesame and Caesar.

Preheat an air fryer to 400°F.
In a large bowl, drizzle the olive oil over the Brussels sprouts and toss to combine. Place in the air fryer and cook for about 5 minutes or until desired crispness. Transfer to a serving bowl, season with salt and pepper and set aside.
Add the marinated chicken breast(s) and cook until just cooked through, 10 to 12 minutes. Cut the meat into desired size and place on the Brussels sprouts.
Scatter the avocado, cucumbers, dates, onions and/or scallions and cheese over the top and drizzle with balsamic glaze and olive oil to taste. Enjoy!
