New York Times bestselling author Dr. Ian Smith loves snacks so much, he included an entire section on them in his new book, BURN MELT SHRED. But he believes in what he calls "strategic snacking," so while the recipes are delicious and good for you, he kept them between 100 and 150 calories. "Make your snacks work for you," he says. This healthy tomato snack recipe, for instance, contains antioxidants and the cheese provides calcium and protein. Bonus: "They taste like mini pizzas, and my kids love them." They're also great as a side dish!

Ingredients

  • 2 plum tomatoes
  • Extra-virgin olive oil
  • Salt and pepper
  • 2 tablespoons breadcrumbs
  • Shredded organic Parmesan cheese

Yield

Serves: 2

Preparation

Preheat the oven to 325°F.  
 
Slice the tomatoes ¾ inch thick and place on a baking sheet. Drizzle with EVOO, season with salt and pepper and sprinkle with the breadcrumbs.  

Bake for 25 to 35 minutes. Sprinkle with Parmesan cheese and serve.
