This healthy tomato snack recipe, for instance, contains antioxidants and the cheese provides calcium and protein. Bonus: "They taste like mini pizzas, and my kids love them." Ingredients

  • 2 plum tomatoes
  • Extra-virgin olive oil
  • Salt and pepper
  • 2 tablespoons breadcrumbs
  • Shredded organic Parmesan cheese

Yield

Serves: 2

Preparation

Preheat the oven to 325°F.  
 
Slice the tomatoes ¾ inch thick and place on a baking sheet. Drizzle with EVOO, season with salt and pepper and sprinkle with the breadcrumbs.  

Bake for 25 to 35 minutes. Sprinkle with Parmesan cheese and serve.
