After a lifelong struggle with his weight, Dustin Brown decided to share his story on social media and ended up not only changing his own life, but also inspiring others to do the same. One of the keys to his weight loss is reducing calories and adding protein. That applies to desserts, too, which he still enjoys. Take these chocolate "ice cream" cubes, for example, which are a really satisfying treat. "It has no added sugar, is high in protein, low in calories and tastes absolutely amazing!" he says. 

Note: You will need three silicone ice cube trays (40 individual sections total).

Ingredients

  • 2 cups water
  • Small handful of ice (or more, if needed)
  • 1 ¼ cups chocolate protein powder
  • ¼ cup powdered peanut butter (Dustin likes PB2)
  • 1 teaspoon guar gum (or xanthan gum)
  • 2 tablespoons stevia
  • 2 tablespoons cocoa powder
  • 2/3 cup frozen strawberries
  • Splash of almond milk (or more, if needed)

Yield

Serves: Makes 120 cubes (about 10 per serving)

Preparation

Add water, ice, protein powder, powdered peanut butter, guar gum, stevia, cocoa powder, strawberries and almond milk to a blender and mix. If the mixture is too runny, add more ice; if it's too thick, add more almond milk.  

Fill 3 silicone ice cube trays (40 individual sections total) with the mixture and freeze overnight. 

Serve frozen cubes in a bowl. Or, if you prefer, melt them in the microwave, about 30 seconds.
