Ingredients

  • 30 dates, pitted
  • 15 thinly very sliced pieces of country ham or Virginia ham, halved lengthwise
  • 2 to 3 teaspoons jalapeno- or serrano-infused oil

Yield

Serves: 8

Preparation

On a cutting board, lay a few pieces of the country ham out flat. Place a date at the end of each piece of ham and roll it up. Repeat until all the dates are rolled in ham.

Do you want to serve warm dates or room-temp dates? Both are good. If time is of the essence, don’t bake them. Simply arrange them on a plate, seam-side down, and drizzle them with a touch of the infused oil.

If you have a little more time, arrange the dates on a cookie sheet, seam-side down. Bake in a 350°F oven until the ham is crispy and the dates are warm and gooey in the center, about 12 to 15 minutes. Remove from the oven, arrange on a plate and drizzle with the infused oil.
