Yum!

Ingredients

  • 3 slices of thick-cut bacon
  • 3 tablespoons crunchy peanut butter
  • 2 slices of banana bread
  • 1 banana, sliced
  • 1 tablespoon unsalted butter, if needed

Yield

Serves: 1

Preparation

Heat a medium nonstick skillet over medium heat and cook the bacon until crispy, about 2 to 3 minutes per side. Transfer the bacon to a plate lined with paper towels to absorb any excess oil, reserving the skillet and any remaining oil in it. 

Spread the peanut butter on one side of each slice of banana bread. Top one slice of the bread with the bacon and banana, then cover with the other slice, peanut butter-side down. 

Heat the remaining oil in the skillet over medium heat, add the sandwich and cook until golden brown on both sides and the peanut butter has melted, about 2 minutes per side. (If the pan is too dry, add a tablespoon of butter.) 

Place the sandwich on a plate, serve and enjoy!
