Rach's husband John makes a summery spritzer cocktail using stone fruit. 

"I call this the Stone Cold Fruit Spritzer, because it's made with apricots, which are a stone fruit," John says. Plums, nectarines and peaches are other types of stone fruit—named for the pit or "stone" in the center

John's spritzer is a perfect match when paired with Rach's summer feast of Beer Can Chickens and Succotash.

 

Ingredients

  • 1 fresh apricot, pitted
  • 1 ½ to 3 ounces vodka
  • 1 ½ to 3 ounces elderflower liqueur (John likes St-Germain)
  • 1 ½ to 3 ounces rosé wine
  • Ice
  • Apricot blossoms, for garnish (optional)

Yield

Serves: 2

Preparation

In a cocktail shaker, muddle apricot, then add vodka, elderflower liqueur, rose, and ice. Cover, shake vigorously, and strain into 2 ice-filled glasses. Garnish with apricot blossoms. Top with club soda or seltzer and stir.
