Sometimes, you just really need comfort food, and this chicken Parm is both comforting and healthy, says NYC-based celebrity personal trainer Don Saladino, who has worked with many Hollywood stars—including Blake Lively and Ryan Reynolds—as well as pro athletes. According to Don, it's a good source of protein, which helps keep you fuller longer and stabilizes your blood sugar. The dish also has flaxseed meal which contains omega-3 fatty acids that can help improve your skin. Additionally, the recipe is really quick and easy to make in an air fryer!

Ingredients

  • ¼ cup white rice flour
  • Sea salt and pepper
  • 1 egg
  • ½ cup quinoa flakes
  • ¼ cup golden flaxseed meal
  • 1 teaspoon nutritional yeast
  • 2 boneless, skinless chicken breasts (preferably organic), pounded to ¾ inch thick
  • 1 ½ tablespoons EVOO
  • 2/3 cup tomato sauce with no sugar added, heated
  • 2 basil leaves (optional)

Preparation

Preheat an air fryer to 375°F. 

Mix rice flour with sea salt and pepper to taste in a medium bowl. In another medium bowl, beat the egg. In a third medium bowl, mix together quinoa flakes, flaxseed meal and nutritional yeast. 

Evenly coat chicken breasts in flour mixture, shaking off any excess. Dredge chicken in the egg mixture and then in the quinoa mixture, coating evenly. Brush chicken with olive oil, coating evenly.  

Cook in air fryer for 10 minutes, or until golden brown and cooked through. Spoon 1/3 cup of tomato sauce over each chicken breast and garnish with a basil leaf (if using).
