For our "bite-size" show, chef and Life Is a Party author David Burtka shared three of his favorite mini appetizers: these tomato pesto bites, Brie Bites and Figs with Goat Cheese and Pink Peppercorn Honey. They are all quick and easy and require only four ingredients! 

Ingredients

  • 16 ripe cherry tomatoes
  • 16 small cubes of mozzarella (small enough to fit inside a hollowed-out cherry tomato), from 1 ball
  • One 4-ounce jar of pesto
  • 16 small basil leaves or micro-basil sprigs

Yield

Serves: 16

Preparation

Cut off the top of each cherry tomato and scoop out the seeds. Place a mozzarella cube inside each hollowed tomato. Fill a small plastic bag with the pesto, cut off one corner of the bag and pipe about ½ teaspoon of the pesto into each tomato. Top with basil.
