John says he calls this the Tuscan sunset because it kind of looks like a sunset and uses Italian ingredients (Campari, fennel and lemons). He created the cocktail to go with Rach's Italian-inspired Crispy Fennel-Topped Fish with Garlic and Oil Spaghetti. Serve both and imagine you are dining in Italy

Ingredients

For the Simple Syrup:
  • ½ cup sugar
  • ½ cup water
For the Cocktail:
  • 5 or 6 slices fennel, plus 1 frond, for garnish
  • 1 ½ ounces vodka
  • 1 ounce Campari
  • ¾ ounce lemon juice
  • ½ ounce Simple Syrup (above)
  • Club soda, to top

Serves: Makes 1 cocktail, plus simple syrup for more

Preparation

For the simple syrup, combine the sugar and water in a small saucepan. Heat and stir over low heat until the sugar is dissolved. Refrigerate in an airtight container until ready to use. 

For the cocktail, muddle the fennel slices at the bottom of a cocktail shaker.  Add the vodka, Campari, lemon juice and simple syrup, shake well with ice and double strain into an ice-filled Collins glass. Top with club soda and garnish with fennel frond.
