For the spicy chutney, stir ingredients together.
For the melt, make a single cut from the center of the tortilla to the edge. Fill one quadrant of the tortilla with 2 tablespoons chutney, then the next quadrant with ham, followed by the cheese, then finish with arugula.
Fold, starting with the bottom left quadrant, working your way around clockwise.
In a small skillet, melt butter over medium heat. Once butter has foamed, add the tortilla to the pan. Toast evenly until the cheese melts and the tortilla is browned on both sides, flipping as needed.
