According to Ray Venezia, butcher and author of The Everyday Meat Guide, pork tenderloin cooks quickly and easily. "They're also very versatile. You can cook them whole or as medallions," he says. "And if that's not enough, during grilling season, they're at their best price of the year."

HOW TO GRILL PORK TENDERLOIN MEDALLIONS

If you're cutting pork tenderloin to make medallions for the grill, you want to make sure your medallions are between an inch and an inch and a quarter thick, Ray says. Cut them straight down to give you roughly the same shape and size as a filet steak.

The pork medallions are smaller pieces of meat, which is why Ray puts them closer to the front of the grill—"so that they don't cook too quickly and dry out on us," he says. They will cook more quickly than a whole pork tenderloin, so make sure to take them off the grill earlier than the tenderloin if you're making both.

HOW TO GRILL PORK TENDERLOIN WHOLE (Ray's favorite way)

You can also grill pork tenderloin whole, which Ray likes to do, because "the bigger the piece of meat, the more moisture will stay in it, so it comes out flavorful and tender."

Make sure to pat your filets dry with paper towels before you rub, so that it sticks. Ray uses a Southwestern rub for his demonstration in the video above.

He puts the whole pork tenderloin all the way toward the back of the grill, which is one of the hottest spots. He recommends cooking a tenderloin for roughly 8 to 10 minutes per side.

Once cooked, thinly slice your tenderloin at an angle. Ray likes to serve his with a chipotle dip and a Southwest salad.
