We Tried the TikTok 2-Ingredient Ice Cream Bread—and It Won't Be the Last Time

We love being in the kitchen; that's no secret. But even we like the sound of a quick and easy two-ingredient recipe. So when we saw something called two-ingredient ice cream bread go viral on TikTok, we had to give it a try. Not only did it look super simple, but we were also just very intrigued. 

There are lots of ice cream bread recipes online, but we just followed the easy directions in this TikTok video, which has over 580k likes.

What is ice cream bread? 

Ice cream bread is a quick bread made with self-rising flour and ice cream (any flavor you want). Following the instructions in the TikTok video above, we used 1 ½ cups of self-rising flour and a pint of ice cream. All you need is about five minutes (likely less) to mix the two together. The rest is idle baking time—45 minutes in a preheated 350° oven. 

Here's the key, though—make sure to let the ice cream defrost to an easily mixable creamy texture before you begin mixing! (Don't let it get all soupy, though.) That's where we went wrong with our first try. We got a little too excited and started mixing while parts of the ice cream were not completely defrosted yet. That resulted in a short, crumbly loaf—we don't recommend it! 

BUT, luckily, since the process is so quick and easy, giving it a second try wasn't a hassle—and we're so glad we did.

What does ice cream bread taste like? 

We wanted to see how a basic loaf would turn out, so we opted for vanilla bean ice cream. The result was a (surprisingly) mildly sweet, super moist and airy loaf. It almost tasted like a cross between pound cake and vanilla birthday cake—though way less sweet than the latter.

You can, of course, use more exciting ice cream flavors (we plan on it!)—but what we love about this variation is that we can serve it with just about anything. Warm it up and slather it with butter just because? We approve. Put some jelly on it for breakfast? Delicious. Dunk it in coffee for an afternoon snack? Perfect. Serve it with strawberries and cream for dessert? A summer dream. Mix in sprinkles and make a funfetti loaf cake? We won't stop you!

It's safe to say that this won't be the last time we make ice cream bread. Whether you need a versatile breakfast option, an afternoon snack or a last-minute dessert for guests, there's no arguing with a quick and easy 2-ingredient recipe that takes about five minutes to prep.
