As it was our "Celebrate like an Italian!" episode, we indeed dined like an Italian with Rach — not to mention Lidia Bastianich and Scott Conant!

But when it came to dessert? We turned to Fabio Viviani, who whipped us up something special from inside the kitchen of one of his many Chicago restaurants, Bar Siena.

Fabio dished that in his restaurant's traditional Italian kitchen, they make their own sausage and pizza, are fully stocked on the EVOO and — get this — make 1,000 pounds of pasta per day!

But as impressive as all of that is, he says it's nothing if this isn't happening: "You can't finish an Italian meal without a traditional Italian dessert!"

And his dessert of choice? Bomboloni — a.k.a. Italian donuts, which hail from his home province, Tuscany.

These babies are made using potatoes, flour, eggs and butter. They're then coated in sugar and served with lots of custard.

Delish.
