Ingredients
3 cups shredded cooked chicken or turkey
1 1/2 cups cooked or raw broccoli florets
1/4 to 1/3 cup olive oil mayonnaise
3 tablespoons finely chopped shallot or red onion
1 teaspoon Dijon-style mustard
2 tablespoons fresh herbs, such as dill, cilantro, mint, parsley or a combination
1 tablespoon fresh lemon juice, or to taste
Yield
Serves: about 4 cups
Preparation
In a large bowl, combine all the ingredients and stir well to fully incorporate. Serve as a salad on a bed of lettuce or in the sandwich wrapper of your choice.
