Ingredients
3 cups rice cereal
3 cups corn cereal
1 1/2 cups honey graham cereal
1 1/2 toasted oat cereal
6 tablespoons unsalted butter, 2 melted and 4 at room temperature
1 cup semi-sweet chocolate chips
1/2 cup almond butter
1 1/2 cups powdered sugar, divided
1 tablespoon dried orange zest
Yield
Serves: 8
Preparation
Preheat oven to 350°F.
In a large bowl, combine the rice, corn, graham and oat cereals. Drizzle with melted butter, toss to coat and pour onto a large cookie sheet. Bake until the cereal starts to turn golden, about 8-10 minutes.
Meanwhile in a double boiler, melt the chocolate, almond butter and remaining butter. Stir until smooth, about 6 minutes.
When the cereal is finished toasting, place it back into the large bowl and pour the chocolate mixture over the top. Stir to coat all the cereal pieces evenly. Set aside for 10 minutes to cool.
To an electric spice grinder, add 3-4 tablespoons of powdered sugar and the orange zest. Pulse until the zest turns to powder, about 2 minutes. Add the orange powdered sugar and the remaining powdered sugar to the cereal mixture. Stir to coat and you are ready to enjoy!!!
