Spaghetti Squash with Spinach and Ricotta

Rachael likens the flavor of this healthy dish to lasagna, yum! She starts with two roasted spaghetti squashes, and shreds the insides with a fork. She mixes up some ricotta, spinach, egg and Parmigiano Reggiano, adds the squash, combines, then puts in a casserole dish. She tops with mozzarella cheese and bakes. That’s it!

Kelsey Nixon’s Skillet Candied Sweet Potatoes with Toasted Pecans

This recipe couldn’t be easier – it’s really a “set it and forget it” method. Kelsey melts a stick of butter in the bottom of a heavy-bottomed pot, then adds sweet potato rounds sliced to about 1/3 inch thick. She mixes in a combination of brown sugar, white sugar, cinnamon and nutmeg, then covers with a tight-fitting lid and cooks for an hour. When they’re done cooking, add a dash of vanilla and stir. Top with toasted pecans before serving. That’s it!

Chipotle Chicken Nacho Casserole

For this king of all nacho recipes, Rachael “tiles” her chips, smoky chipotle chicken, and cheese so that the ingredients are well distributed, heats, and then tops with salsa, jalapenos and sour cream. Nothing wrong with any of that!

Marc Murphy’s Brussels Sprouts with Bacon
