First, she makes her own breading from homemade breadcrumbs, herbs, Dijon mustard, shallots and garlic. Then she prepares a tray of peeled butternut squash or sweet potatoes cut into long wedges, and drizzles with olive oil. Finally, she dredges pork chops in flour, an egg wash, and the breadcrumbs, then sets them atop the vegetables and put them right into the oven. Yum!
