What’s in Season: 7 Recipes Featuring Fresh Spring Asparagus

No matter how cool your climate, chances are asparagus is in season or will be soon. So head on over to your local farmer’s market, pick some up, and check out seven delicious ways to prepare those tender green stalks below!

No. 1: Rachel Beller's Green Pea, Asparagus and Parsley

For this soup, Rachel starts by sauteeing leeks in coconut oil, then adds veggie broth. She then adds lots and lots of peas and asparagus and only cooks for a few minutes until the veggies are tender. Then, she purees half the soup, and leaves the other half whole for some texture, and serves with a garnish of parsley. How easy and healthy is that!

No. 2: Penne with Pistachio-Mint Pesto

This pasta brings in several layers of green – via pistachios, mint, parsley and asparagus. It’s a simple and quick comfort food you can toss together for a St. Patrick’s Day dinner after a long day.

No. 3: Ryan Scott’s Killer Asparagus Green Bean Casserole
