9 Soups that Will Chase Away the Spring Chill

Spring has sprung, but it’s probably still not too warm in your neck of the woods. Read on for nine delicious and belly-warming soups that will keep you cozy until the warm weather settles in for good!

No. 1: Ming Tsai’s Shiitake French Onion Soup

Ming Tsai elevates his take on French Onion Soup by using red onions, shallots and leeks as the base of the soup. He also gives it a slight Asian taste with ginger, shiitake mushrooms and ginger. He also puts his cheese and toasted baguette in the bottom of the bowl, and tops with fried shiitake chips for added flavor. Delish!

Tip: Use the leftover top of the potato boat as a little “stand” for your potato.

No. 2: Portuguese Stew

This boldly flavored, yet not too heavy, soup is served with toasted bread slathered with homemade Romesco sauce. It’s hard to imagine how a meal could get more comforting than this!

No. 3: Chorizo-Zucchini Posole with Chipotle

Rachael compares her take on the traditional Mexican stew posole to a healthy version of nachos, because she plates up homemade tortilla strips, shredded cheese, radishes, avocado, and pours a rich, spicy chicken and zucchini soup over it.

No. 4: Mama Beller’s Chicken Soup

For this hearty chicken soup, Rachel poaches bone-in chicken breasts in chicken stock and add a whole peeled parsnip and a whole onion and slow cooks for an hour. She then removes the chicken and shreds and sets aside, and adds zucchini, yellow squash, carrots, celery, crushed garlic and cooks. To serve, she puts chicken in a bowl, spoons over the soup, and tops with a garnish of celery leaves.

No. 5: Tortellini Corn Chowder

This soul-warming quick and easy soup would be a perfect meal-in-a-hurry on a cool night.

No. 6: Katie Lee’s Broccoli Cheddar Soup

Dinner doesn’t get easier than this, folks! Katie just sautees some onions, adds broccoli and continues to sautee, then adds chicken stock. Simmer for 10 minutes, then puree in batches or use an immersion blender to blend right in the pot. Then, put back on the heat and melt in two cups of cheddar cheese. Done! Perfect easy weeknight dinner.

No. 7: Bob Harper’s Skinny Chicken Soup

Bob Harper slow cooks his chicken soup to get all of those nutrients into his broth, and doesn’t shy away from dark meat, because fat doesn’t bother him. It’s the starchy carbs, processed foods and sugar that he likes to avoid.

No. 8: Richard Blais’ Pumpkin Soup

This warm and comforting soup features pumpkin, carrot, onion and sage. Richard Blais tops it with a nitro crème fraiche, but you can skip the liquid nitrogen if that is too extreme for you!

No. 9: Italian-Style Rotisserie-Chicken Noodle Soup with Green Beans

Rachael’s homestyle Italian chicken noodle soup is guilt-free, featuring loads of figure-friendly ingredients like herbs, vegetables and nutrient-rich stock.

Tip: Leave out the skin and the dark meat if you want to cut the calories even further!
