Don't have buttermilk on hand? Here are a few easy buttermilk substitutes!

Ingredients

  • 1 3.9-ounce box instant banana pudding mix
  • 1 cup whole milk
  • 1 cup buttermilk
  • 1/2 teaspoon vanilla
  • 24 vanilla wafer cookies, such as Nilla Wafers
  • 2 bananas, sliced
  • Whipped cream, for topping
  • Salted peanuts, for topping (optional)
  • 6 4-ounce glass jars

Serves: 6

Preparation

In a medium-size bowl, whisk together the pudding mix, milk, buttermilk and vanilla until smooth. Let sit for 5 minutes until firm.

Crush two vanilla wafers into the bottom of each glass jar. Top the crushed wafers with two tablespoons of the pudding mixture and a few slices of banana. Crush two more cookies over the bananas then top that with two more tablespoons of the pudding mixture. Screw the lids onto the jars and place in the fridge for a few hours or overnight.


To serve, remove the lids and top each jar with a little whipped cream and some crushed peanuts.
