  • 1 cup milk
  • 2 eggs
  • 1/4 cup Irish whiskey
  • 2 teaspoons ground cinnamon
  • 8 slices Soda Bread
  • 1/4 stick butter
For the honey vanilla mascarpone
  • 3/4 cup plus 2 tablespoons mascarpone
  • 2 tablespoons honey
  • 1/2 teaspoons vanilla extract


Serves: 4


Place the milk, eggs, whiskey and cinnamon in a bowl and whisk well. Soak the slices of bread in the egg mixture for a couple of minutes.
While the slices of bread are soaking, put the mascarpone, vanilla and honey into a bowl and mix together well.

Melt the butter in a frying pan and fry the egg-soaked slices of bread over medium heat until they are a golden color on each side.
Serve the Irish toast topped with a dollop of the honey vanilla mascarpone cream.
