Leftovers make for an amazing breakfast or snack topped with a fried egg and are great in a sandwich or chopped into an omelet as well—but why would you have any leftovers? Adding one chive to each bacon strip before wrapping the asparagus spear also adds great flavor.

Ingredients

  • 1 bunch asparagus, trimmed
  • 1 package bacon, (12-ounce), preferably center-cut , halved lengthwise
  • 1 teaspoon olive oil
  • salt, Garlic for serving
  • Black pepper, for serving

Serves: 6-8

Preparation

Preheat the oven to 350˚F. Wrap a bacon strip around each asparagus spear like a pinwheel, then set on a baking sheet. Roast for 15 minutes, flipping asparagus halfway through, the broil the bacon to crisp the bacon, a few minutes more. Arrange bacon-wrapped asparagus on a platter, and season with garlic salt and pepper.
