Chris Bianco, one of the stars of the Netflix hit show "Chef's Table: Pizza" and the first pizzaiolo to win a James Beard Award, is credited with introducing America to artisanal-style pizza. He also makes a darn good salad! This one combines a lemony dressing with arugula, apples, goat cheese and pecans and the balance of textures and flavors is perfect. (Sub in other lettuces, as you like.) It's also hearty enough to eat on its own for lunch. 

Try pairing it with his Rosa Pizza

Ingredients

For the Dressing:
  • Juice of 2 lemons
  • ½ cup olive oil
  • 1/3 cup apple cider vinegar
  • Salt and pepper, to taste
  • Honey, if needed
For the Salad:
  • 4 ounces arugula
  • 2 ripe apples, thinly sliced
  • 2 ounces goat cheese, crumbled
  • 1 ounce candied pecans, chopped

Yield

Serves: 2

Preparation

For the dressing, mix the ingredients in a Mason jar or small bowl. Add some honey, if needed. 

For the salad, combine the ingredients in a large bowl, add the salad dressing to taste and toss.
