"This is not a traditional burger recipe," says Rach. "I'm using ground chicken for this because I was doing a mashup in my head and thinking of all the trigger words that people love so much: Buffalo anything, chili anything, chicken anything. People love all of these things." So, this is a ground chicken, Buffalo, chili-seasoned burger with blue cheese dressing. As she puts it, the burger has been "Buffalo-magized!"
For the blue cheese special sauce, stir together ingredients and reserve.
For the Buffalo sauce, melt butter in small pan over medium heat. Add garlic and swirl in hot sauce and Worcestershire. Simmer 2 minutes, remove and reserve.
For the burger patties, over medium heat in small skillet in 1 tablespoon oil, a turn of the pan, cook onions, garlic and chili to soften with salt and pepper, then cool.
To chicken, add the cooled onion mix, salt and pepper, panko, cumin and chili powder and combine. Form four patties.
Preheat a cast-iron or nonstick skillet over medium-high heat and spray pan with oil.
Cook patties 3 minutes on each side, add buffalo sauce and turn to coat them evenly. Top patties with cheese to melt. Serve on buns and, if using veggies, stack them on bun bottoms. Top burgers with special sauce and bun tops.
