We asked Missouri-based Rod Herrenbruck—the self-proclaimed king of tailgating—to share some of his favorite tips to get you ready for game day, as well as his favorite tailgating recipe. Turns out, it's from his wife, Deb. "A huge part of tailgating is the food," says Rod. "The one staple we have at every one of our tailgates is Deb's corn dip. She's been making it for years and everybody loves it! There's nothing better." It's creamy and cheesy and has just the right amount of spice. It also couldn't be easier to whip up. As the Herrenbrucks say, "Tailgate on!"

Ingredients

  • One 15-ounce can corn, drained
  • One 7-ounce can diced green chiles
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 5 to 6 dashes hot sauce, or to taste
  • ½ teaspoon cayenne pepper
  • ½ teaspoon garlic salt
  • 1 cup shredded sharp cheddar cheese
  • Tortilla chips, to serve

Serves: 4

Preparation

In a large bowl, mix together the corn, green chiles, mayonnaise, sour cream, hot sauce, cayenne pepper and garlic salt. Add the cheddar cheese and mix again until thoroughly combined. Serve with tortilla chips.
