John created this cocktail to go with Rach's Warm Winter Panzanella salad, which also uses blood orange and pomegranate. He calls it Fall Back because fall is turning to winter, and we recently turned the clocks back. The drink is bright and light and a nice way to ease into the new season.
For another cocktail from John that's perfect for this time of year, check out his Blood Orange Collins.
*For the simple syrup, combine 1 cup sugar and 1 cup water in a small saucepan and bring to a boil over medium heat. Simmer until the sugar is dissolved, then let cool to room temperature. Syrup will keep, tightly covered, in the refrigerator for up to 1 month. Makes about 1 ½ cups.
Muddle the 2 sprigs of rosemary at the bottom of a cocktail shaker. Add the vodka, blood orange juice, pomegranate juice and simple syrup, shake well with ice and strain into an ice-filled Collins glass. Top with the club soda and garnish with the remaining rosemary sprig.
Always drink responsibly.
