Ingredients

  • ¼ cup unsalted butter
  • ⅔ cup molasses
  • ¼ cup sugar
  • ⅔ cup apple cider or juice
  • 1 egg
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground ginger
  • 2 teaspoons freshly grated ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • Cooking spray

Preparation

Preheat oven to 325°F.

Combine the butter, molasses and sugar in a mixing bowl. Using a small saucepan on the stove or the microwave, heat the apple cider until just at a boil. Pour the hot cider over the butter mixture, then stir until the butter is completely melted. Add the egg and whisk to combine. Add the flour, baking soda, salt and spices, and mix until smooth and combined.

Coat an 8-by-4-inch loaf pan with cooking spray. Pour the batter into the pan, then bake until a toothpick or paring knife inserted in the center comes out clean, about 45 minutes. Set aside to cool.
