Baked apples stuffed with old-fashioned rolled oats and pecans from Dr. Ian Smith is the healthy snack your sweet tooth deserves.
"[This way], you can snack," Dr. Ian says about food cravings, "but it's healthier."
Ingredients
- 4 large apples (Dr. Ian likes using Honeycrisp or Empire for this recipe)
- ¾ cup old-fashioned oats
- ⅓ cup pecans, chopped
- ¼ teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 ½ tablespoons coconut oil, melted
- ½ cup apple cider
- 1 tablespoon organic maple syrup

Preparation
Preheat oven to 425 degrees. Wash your apples under warm water and dry the skin.
Using a knife or corer, core apples making sure to remove the entire core and pips. Keep the skin on.
Grease an oven safe baking dish with cooking spray, then place the apples in the dish.
In a bowl combine oats, pecans and spices. Then stir in the melted coconut oil and maple syrup. Mix well. Divide oat mixture evenly among the apples, placing it in the cored-out centers.
Pour apple cider in the bottom of the baking dish, then cover apples with foil and bake for about 30 minutes. Baste apples with cider every 5-10 minutes, then uncover the apples for the last 10 minutes. Serve when apples are tender to the fork and warm. Enjoy.
