Rach's one-pan turkey chili gets sweet and spicy flavor from maple syrup, chipotle chiles and bacon.

Ingredients

  • 1 tablespoon neutral oil or olive oil
  • ⅓ pound meaty bacon, chopped
  • About 2 pounds chopped roasted turkey or ground turkey, (white and dark meat combined)
  • Salt and pepper
  • 1 scant palmful poultry seasoning, such as Bell's (about 1 tablespoon)
  • 1 large red onion, finely chopped
  • 2 cloves garlic, crushed or sliced
  • 1 scant palmful ground cumin, about 1 tablespoon
  • 1 scant palmful ground coriander, about 1 tablespoon
  • ½ palmful smoked sweet paprika/pimenton, about 1 ½ teaspoons
  • ½ palmful Mexican oregano, about 1 ½ teaspoons
  • 2 cups turkey or chicken stock/bone broth
  • About ¼ cup real dark amber maple syrup
  • About 2 tablespoons Worcestershire sauce
  • One 14-ounce can crushed or diced fire-roasted tomatoes
  • 3-4 tablespoons chipotle in adobo (pureed) or Chipotle Tabasco, to taste
  • 1 can red beans, optional
Toppings to Mix and Match:
  • Roast butternut or pumpkin squash roasted with olive oil spray, seasoned with salt pepper and nutmeg
  • Toasted pumpkin seeds with Old Bay and salt
  • Oyster crackers
  • White or yellow sharp cheddar or pepper jack cheese
  • Bacon-flavored corn chips
  • Pickled mild or hot jalapeño peppers
  • Freshly popped popcorn with granulated maple sugar and smoked salt or yellow cheddar and red or green chili powder

Preparation

Heat a large cast-iron skillet or deep pan over medium-high heat, add oil, 1 turn of the pan, add bacon and brown and render. Add finely chopped roasted turkey or ground white and dark fresh turkey, season with salt and pepper and poultry seasoning and lightly brown 5 minutes. Add onions, garlic, cumin, coriander, paprika, and oregano, soften a few minutes, add stock or broth, syrup, Worcestershire, tomatoes, chipotle in Adobo or Chipotle Tabasco, and beans if using, then simmer to desired thickness and serve with toppings of choice.
