These chocolate and salted pistachio cornflake clusters from Grant Melton, one of our former culinary producers, are so easy to make, so tasty and so popular. Bonus: They require just three ingredients—and no baking!

Ingredients

  • 1 ¼ cups milk chocolate chips 
  • 2 cups cornflake cereal
  • ¾ cup chopped salted pistachios

Yield

Serves: Makes 6 to 8 cookies

Preparation

Place a small bowl over a small pot of boiling water to create a double boiler. Add the chocolate chips and stir until completely melted.  

Remove the bowl from the pot and add the cornflakes and ½ cup of the chopped pistachios. Carefully stir to combine, being careful not to crush the cereal. Scoop the mixture into 6 to 8 big mounds on a parchment-lined sheet tray. Sprinkle the tops with the remaining pistachios.   

Let sit for at least 1 hour before serving. Store in an airtight container at room temperature.
