Rachael shares an easy recipe her family loves: cabbage slaw tossed with a simple oil 'n' vinegar poppy seed dressing.

For Rach's Memorial Day menu, she serves the slaw with her Spicy Fried Chicken.

Ingredients

  • ½ cup cider or white vinegar
  • ¼ cup superfine sugar
  • 2 tablespoons salt
  • 2 teaspoons white or fine black pepper
  • 3 tablespoons neutral oil, such as peanut or safflower
  • 1 tablespoon celery seeds
  • 3 tablespoons poppy seeds
  • 1 small white cabbage, cored, quartered and shredded
  • 1 carrot, grated or shredded
  • ½ red onion, finely chopped

Yield

Serves: 4 to 6

Preparation

Whisk up dressing and add cabbage, carrots, and onions. Toss to coat and chill.
