Ingredients

  • 6 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 3 tablespoons cornstarch
  • 2 ½ cups beef broth
  • 1 ¼ cups chicken broth
  • 2 tablespoons pepper
  • Salt, to taste
  • 3 Latkes
  • 2 cups white cheddar cheese curds
  • 2 tablespoons finely chopped fresh chives, for garnish

Yield

Serves: 12

Preparation

In a large saute pan, melt the butter over medium-high heat. Add flour and stir constantly with a wooden spoon until the roux is golden brown, about 5 minutes.

In a small ramekin, combine cornstarch and 2 tablespoons water to make a slurry. Let sit until starch is absorbed.

Add beef and chicken broth to the roux and bring to a boil. Stir in the pepper and slurry, and let simmer for 3 minutes. Season with salt to taste.

Top latkes with cheese curds. Pour hot gravy on top and sprinkle with fresh chives.
