Rach combines potatoes + parsnips with cheddar + horseradish pub cheese for a super-flavorful twist on traditional mashed potatoes. (Feel free to use any kind of pub cheese you like, though.) 

These mashed potatoes are part of Rach's 2021 Thanksgiving feast, which includes Turkey 2 WaysCider Gravy and Cranberry Sauce. John's kicking off the meal with his Gobbler Cobbler Cocktail.

Ingredients

  • 2 large parsnips, cubed 1 inch
  • 6 large russet potatoes, peeled and cubed 2 inches
  • Salt
  • 1 cup milk
  • 1 stick butter
  • 1 tub sharp white cheddar and horseradish pub cheese   
  • Pepper, to taste
  • ½ cup chives, finely chopped

Yield

Serves: 8

Preparation

Cover parsnips and potatoes with cold water and bring to boil, season with salt and cook until tender.  

Warm milk and butter in small pot.

Drain and pass parsnips and potatoes through a food mill, put back into pot and stir in milk and butter. Add pub cheese, stir to combine and season with salt and pepper to taste. Top with chives.
