She loves to eat it on top of salads, including this version with shaved Brussels sprouts, toasted almonds and lemon dressing. It's super-tasty, quick and easy to make and holds nicely in the fridge.

For the lemon dressing, in a small bowl, whisk together 3 tablespoons olive oil, the lemon juice and salt and pepper to taste.
In a large mixing bowl, toss together the Brussels sprouts, almonds, dates, red onion and dressing until combined.
Plate the salad, top with grapefruit segments, sprinkle with cheese and enjoy!
