According to celebrity nutritionist and Nutritious Life founder Keri Glassman, some foods that feel like indulgences actually have health benefits. Pecorino cheese is one of them. She loves to eat it on top of salads, including this version with shaved Brussels sprouts, toasted almonds and lemon dressing. It's super-tasty, quick and easy to make and holds nicely in the fridge.

Ingredients

  • Olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper
  • 4 cups shaved Brussels sprouts
  • ½ cup toasted almonds, lightly crushed
  • ½ cup pitted dates, chopped
  • 1/3 cup finely chopped red onion
  • 1 grapefruit, peeled and segmented
  • 1/3 cup shredded pecorino cheese

Serves: 4

Preparation

For the lemon dressing, in a small bowl, whisk together 3 tablespoons olive oil, the lemon juice and salt and pepper to taste. 

In a large mixing bowl, toss together the Brussels sprouts, almonds, dates, red onion and dressing until combined.  

Plate the salad, top with grapefruit segments, sprinkle with cheese and enjoy!
