Ingredients

  • 1 pound fettuccine, angel hair or penne pasta
  • 1 ½ pounds shrimp, peeled and deveined 
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ cup fine chopped chives, plus more for garnish
  • 3 cloves garlic, finely chopped
  • 1 lemon, zested and juiced
  • ½ teaspoon paprika
  • Salt and pepper
  • 2 cups heavy cream
  • ¾ cup shredded Parmesan cheese

Serves: 4 to 6

Preparation

Bring a large pot of salted water to a boil. Cook penne according to package instructions to al dente. 

In a large skillet, cook shrimp in olive oil and butter until they just begin to curl, then add chives, garlic, lemon zest and juice, paprika, salt, and pepper. Cook 2 to 3 minutes. Add pasta and cream. Cook until cream begins to thicken, 2 to 3 minutes more. Stir in cheese, then sprinkle with remaining chives and serve.
