Ginger + curry give these Sloppy Joes a Thai taste in this fun twist from Rach.

Ingredients

  • 2 tablespoons coconut oil or canola or peanut oil
  • 1 ½ pounds ground meat: all beef or ground dark/mixed meat turkey or 1 pound ground beef/turkey with ½ pound ground pork
  • 1 sweet pepper, such as red field or bell, finely chopped
  • 2 small chilies (red or green), seeded and finely chopped
  • 1 onion, finely chopped
  • 1 ½-2 inches ginger root, grated or finely chopped
  • 4 cloves garlic, finely chopped
  • 1 tablespoon fish sauce or Tamari/soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons pourable light brown sugar 
  • 2 tablespoons red curry paste or Sambal Oelek chili paste
  • ½-1 cup stock or water
  • One 14-ounce can diced tomatoes 
To serve, your choice:
  • Napa or butter lettuce leaves OR plain or sesame seed soft rolls
  • Lime wedges
  • Chopped mint and Thai basil or cilantro
  • Thin strips of watermelon radish or radishes 
  • Toasted puffed rice, unsweetened
  • Thinly sliced seedless cucumbers or chopped bread and butter pickles
  • Chopped dry roasted peanuts

Serves: 4

Preparation

To a large cast-iron or heavy skillet preheated over medium-high heat, add oil, about 2 tablespoons, brown and crumble the meat, add peppers and onion, soften a couple of minutes. Add ginger, garlic, fish sauce, rice wine vinegar, sugar, curry or chili paste, stock or water and tomatoes, bring to boil, and reduce heat to simmer.

Arrange the lettuce or separate and pile up rolls and toppings of choice. Serve Thai-style Sloppy Joes from the pan with lettuce or rolls.
