One taste of this tried-and-true, super-simple salsa from Camila McConaughey—mom of three, entrepreneur and Women of Today founder—and you might not buy salsa from the store again. It's one of her favorite late-night snacks. All you need to do is roughly chop the cilantro, onions and peppers and throw them into a blender with the rest of the ingredients. If you like your salsa extra spicy, add an extra jalapeno or serrano. If you like mild salsa, skip the peppers altogether.

Pro Tip from Camila: It's important to refrigerate the salsa for about eight hours or overnight before serving it, so that all the flavors have a chance to meld together. 

Ingredients

  • One 28-ounce can petite diced tomatoes, slightly drained
  • 1 cup roughly chopped cilantro
  • ½ cup roughly chopped onions
  • 1 to 2 jalapeno or serrano peppers (if you like spice), roughly chopped
  • Zest and juice from 1 large lime or 2 small limes
  • 2 teaspoons ground cumin
  • 2 teaspoons sea salt

Yield

Serves: Makes 3 ½ cups

Preparation

Combine all the ingredients in a blender or a bowl that you can use an immersion blender in. Pulse/blend until combined, but not pureed (the salsa should have some texture to it). 

Transfer to a container with a lid, cover and refrigerate for 8 to 10 hours or overnight before serving.
