Rach's hubby John riffs on the white wine spritzer by dressing it up with mint, cucumber, fresh lemon juice and a splash of elderflower liqueur. 

"I'm calling this the 'Long Day Summer Spritzer' because, A) these are long days these days, and B) it's very low in alcohol content, so you can drink them all day long," John says. (Responsibly, of course!) "And the days actually get longer in the summer," Rach adds.

John's summer-ready cocktail goes well with Rach's Greek Kebabs menu—or "Ke-BOBs," as she likes to call them, in honor of virtually cooking them with her friend Bob Harper:

Ingredients

  • Ice
  • 2 to 3 thick peeled cucumber slices, plus thin slices for garnish
  • 1 lemon, juiced, plus thin slices for garnish
  • 5 to 7 fresh mint leaves, plus small sprigs for garnish
  • About 4 ounces elderflower liqueur (Rach and John's go-to is St-Germain)
  • About 1 cup white wine (John likes Sancerre)
  • Club soda or seltzer, for topping

Preparation

In 2 collins glasses or large wine goblets, layer ice with thin cucumber and lemon slices. 

In a cocktail shaker, muddle the thick cucumber slices, then add mint leaves and muddle again. Add elderflower liqueur, white wine, and lemon juice, then fill with ice, cover, and shake vigorously. Strain into the prepared glasses and top with club soda or seltzer.
