John named this vodka and ginger beer cocktail after the Thai rickshaw-cum-car mode of transport. "It's like a Moscow Mule, but I zip it up a bit," John says. 

Make a batch to go along with Rach's holiday brunch of Thai-Stuffed Omelets and Cucumber Salad

Ingredients

  • 3 or 4 slices seedless cucumber, peeled, plus 1 slice, for garnish
  • 1 sprig fresh cilantro
  • 1½ ounces vodka
  • 1 ounce fresh lemon juice
  • ½ ounce simple syrup
  • 3 ounces ginger beer

Yield

Serves: 1

Preparation

Muddle cucumber and cilantro at bottom of cocktail shaker. Add ice and the remaining ingredients except ginger beer, then shake and strain into an ice-filled copper mug. Top with ginger beer and garnish with a cucumber slice.
