On *American Idol*, Katharine McPhee captured hearts everywhere with her rendition of "Over the Rainbow." Now that she's released her first CD, titled [*Katharine McPhee*][1], she tells Rachael what it's like to finally be singing her own songs instead of covering other artists. "It feels good to be on stage," she says. "I just started rehearsing it and singing it live. You don't have any other voices in your head like, 'Katharine, that's how Beyonce does it, or that's how Christina does it.' It's just my voice and I don't have all that chatter going on. It's an amazing feeling and I just feel so accomplished to have one record finished." Katharine shows off her chopping skills when she makes [Chicken Quesadilla Pinwheels][2] with Rachael, and gives Rachael an important tip when it comes to blending the [Almond Cilantro Dressing][3].
