Baked potatoes take a long time to cook -- some might say, a really long time. So if you want to have some with dinner, the key is planning ahead and getting them in the oven early enough.

Here’s how to do it: preheat oven to 400°F. Prick the top of potatoes in a few places and rub them with a little olive oil. Season with salt and pepper and roast 1 hour.

(Alternatively, you could try microwaving. Just poke the outside of a potato with a fork and microwave on high for 8-10 minutes (or until potato is tender), turning once.
